Kamut (Triticum turgidum or T. turanicum) is an ancient grain with large gold kernels, native to Egypt and Asia Minor, often referred to as 'King Tut's' wheat. It is related to the ancient grain spelt and is a distant relative of durum wheat. Its plump gold kernels, called 'berries', are almost 3 times the size of modern hybred wheat. Kamut was introduced to America by an organic farmer in Montana in the 1940s. It is a rare non-hybridized wheat that offers the highest protein of any wheat. Kamut's protein structure (gluten) is highly water soluble and many people with intolerance to other wheat find that they can enjoy kamut.
Preperation:
Cook Kamut 1 cup grain to 3 -4 cups cook for 1 hour, yield 2 1/2 cups
