Mitoku Ryujin Yuuki Umeboshi Paste is made from the wild, tart umeboshi plums grown deep in the Japanese Alps by small family growers. The Ryujin village trees are over 100 years old and the plums produced are heirloom quality and have never known chemical fertilizers or pesticides. They are pickled in sea salt, sun-dried, then aged in their own juice, with shiso leaves added to impart their deep red color. Ryujin Paste adds a lively tanginess to dressings, dips, sauces, sushi rolls, and vegetables.
