Susan Marque's Fast & Easy Healthy Cooking Volume #4 Breakfasts
Where ever I go the subject of food will often come up. Many people can understand about eating whole foods for lunch or dinner, but they are at a loss when it comes to ideas for breakfast. "You mean like oatmeal?" I often hear when suggesting whole grains for breakfast. "Yes!" I will say, "and there is so much more." In this edition of Fast and Easy Healthy Cooking, there is a whole range of great breakfast ideas to choose from. Most mornings, I eat grain in its whole form and once or twice a week, I'll have something more refined like muffins, waffles or pancakes. On the weekends I like to make something special that might take a little more time to prepare. I also know when I eat refined grain products, fruits and syrups, I won't be as sharp as if I eat millet, quinoa or a mochi melt, so I plan accordingly and have the fun, relaxing treats on days I can relax. I've included a little of everything. You might have a Japanese style breakfast one day with miso soup, greens and brown rice with sesame salt. Then another day—have biscuits and gravy.
Play with the recipes and make them your own. Use whatever flours or grains sound good to you. Add seasonings that please your unique palette or swap ingredients whenever you wish.
