Until recently, Yaemon Soybean Miso was being sold under the name Mansan. Handmade koji balls "miso dama" make this miso unique in all of Japan. Aged in 100 year old wooden casks. This famous, authentic miso has a deep, delectable, rich taste. Traditionally used as a medicinal miso because it is highest in beneficial isoflavones. Unpasteurized Aged 36 Months

Ingredients: organic whole soybean koji, water, sea salt, and a trace of roasted barley flour (this is used as a catalyst to feed the koji during production).
