  Inorder to make tofu, here are some tips you need to know!
When you make the Nigari solution use HOT WATER and add about 3tsps per pound of dry beans to 1 cup of HOT WATER!
1 pound of beans should yeild about 8-16 oz of tofu,some claim more!
The soymilk MUST be HOT,
ALMOST BUT NOT BOILING, THEN you add the HOT Nigari solution to it slowly,
and stir. if you have done it right,you will see it curd right before your eyes! you can add more if you want,because only so much is going to curd! Let the milk curd rest for 30 minutes and cool down,and filter out the curds using muslin cloth in a mold,fold the cloth,and press the pudding looking curds so they drain. the soymilk will come out of the tofu.
Mitoku Nigari works great! you don't need much,the trick is the temperture,don't burn the milk! heat it slowly!and use HOT water when making the salt water!
i have tried a number of times,and its an art,which i want to get down to a science!

  Makes very good home made TOFU.

I also put an 1/16 of an oz. to a liter bottle of drinking water along
with a 1/32 oz. of Arm & Hammer baking soda. Tastes great.

Make sure that when you open the bags that you have handy an air tight
glass container to put it in. (glass, rubber seal, metal clamp)
It will absorb water out of the air very quickly (5 to 10 minutes)and start to turn to liquid.
